How this is calculated
The USDA recognises three safe methods for thawing a turkey, each with a very different time requirement. The refrigerator method is the gold standard: keep the turkey in its original wrapper in a pan (to catch drips) in a 40°F (4°C) fridge at 1 day for every 4 pounds — a 16-lb bird needs 4 days. The turkey can stay in the refrigerator for 1–2 extra days before roasting, giving you scheduling flexibility.
The cold-water method is faster: submerge the wrapped turkey in cold tap water and change the water every 30 minutes to maintain food-safe temperatures. Allow roughly 30 minutes per pound — a 16-lb bird takes about 8 hours. The turkey must go directly into the oven once thawed; it cannot be refrigerated afterwards.
Microwave thawing is the quickest option at approximately 6 minutes per pound at 30% (defrost) power, but times vary significantly by microwave wattage. Follow the manufacturer's defrost instructions carefully and rotate the bird for even thawing. Like the cold-water method, a microwave-thawed turkey must be cooked immediately because parts of it may have started cooking during defrosting.
Never thaw a turkey at room temperature — bacteria multiply rapidly between 40°F and 140°F (4–60°C) and can make the bird unsafe even before the inside thaws.
