How this is calculated
Grill size is measured by primary cooking area in square inches (sq in) in North America, or square centimetres in metric countries. As a rule of thumb, plan roughly 64–80 sq in of grill space per guest for standard items like burgers and sausages, and 100–120 sq in for large cuts such as whole chickens, ribs or steaks that take up more space and cook more slowly.
The 20 % buffer accounts for indirect heat zones — areas where you move food to finish cooking without direct flame — and for the fact that not all food is on the grill at the same time. Without a buffer you risk crowding the grill, which traps steam and prevents proper searing.
Grill size categories are rough guidance based on typical product ranges (tabletop, compact, mid-size, large, XL). The actual dimensions vary between manufacturers. When buying, check the primary cooking area only — secondary warming racks should not count toward your working space. For charcoal grills, remember that cooking area on kettle grills uses a circular shape, so the listed diameter understates the workable area compared to a rectangular gas grill of the same diameter.
